Here we are at day 19 already and I must admit, there are days that I write down my small daily action and other days I do not. There are also days where I get a ‘little’ off track. But the biggest thing is to come back to the challenge and at day 30 even if there is just a little something that has changed, then it is improvement. For those of you still hanging in there with me, I hope you are able to report something positive at the end of the challenge period..or whatever we will call it. Maybe challenge #2 can be to revamp a bit and think of ways to stay on track.
The one thing that I wanted to do is involve my boys in the kitchen a bit more. Thinking that this salad will be both yummy AND easy to make, I wonder if they will turn up their noses or dive right in with me. We shall see.
Here is what you (and I) will need:
One bunch of asparagus, halved and trimmed
A small package of cherry tomatoes, halved. And don’t eat them all before making the salad ๐
One avocado, cut into cubes
A handful of basil, chopped
For your dressing:
1 TBS blue cheese crumbles
1 1/2 TBS lemon juice
1 tsp dijon mustard
1/4 cup olive oil
1/2 tsp salt
1/4 tsp pepper
Boil the asparagus for 2 minutes, drain and rinse with cold water then mix with the other salad ingredients.
Whisk together dressing ingredients until combined and pour over salad
Toss, taste and serve!
